A strong, versatile homemade vanilla extract made with 80-proof vodka and whole vanilla beans. This version is designed as a perpetual bottle: use the extract as it matures, then replenish both alcohol and fresh beans over time so the bottle stays flavorful rather than becoming diluted.
• 40% ABV equals 80 proof in the United States: multiply the ABV by 2 to calculate proof.
• An inexpensive, neutral 80-proof vodka is ideal. Premium vodka is unnecessary; invest in good vanilla beans instead.
• Keep the beans submerged. If the liquid level drops below the beans, add enough appropriate alcohol to cover them.
• Do not endlessly top the bottle with vodka without adding fresh beans. That gradually weakens the extract.
• Bourbon can also be used for extract, but it contributes caramel, oak and spice. Vodka is the most neutral and versatile choice for a perpetual everyday bottle.
