Classic New York-Style Cheesecake

Ingredients
Crust
- 2 1/2 cups graham cracker crumbs
- 6 tbsp unsalted butter melted
- 2 tbsp granulated sugar
Cheesecake Filling
- 4 8-ounce packages cream cheese softend
- 1 1/4 cups granulated sugar
- 3/4 cup sour cream room temperature
- 2 tsp vanilla extract
- 2 tbsp all-purpose flour
- 4 large eggs room temperature
Instructions
Prepare the Crust
- Preheat oven to 325°F.
- Combine graham cracker crumbs, sugar, and melted butter.
- Press firmly into the bottom and slightly up the sides of a 9-inch springform pan.
- Bake for 10 minutes and cool.
Filling
- Beat cream cheese until smooth and creamy.
- Add sugar and mix until incorporated.
- Blend in sour cream, vanilla, and flour.
- Add eggs one at a time, mixing on low speed until just combined.
- Pour into prepared crust.
Bake
- Bake at 325°F for 65–75 minutes.
- The edges should be set while the center still has a slight jiggle.
- Turn off the oven, crack the door, and cool for 1 hour.
- Chill
- Refrigerate for at least 6 hours or overnight.
- Decorate
- Whip cream, powdered sugar, and vanilla until stiff peaks form.
- Pipe a decorative border around the cheesecake before serving.
