Chef Neena’s Creamy Fluffy Jell-O Mousse

Ingredients
- 1 large 6 oz box flavored Jell-O (any flavor)
- 2 cups boiling water
- 2 cups cold heavy whipping cream
- 1 teaspoon vanilla extract optional
- Pinch of salt optional
Instructions
- Whisk the Jell-O into the boiling water until completely dissolved.
- Allow the mixture to cool to room temperature, then refrigerate until it thickens to the consistency of egg whites. Do not let it fully set.
- In a chilled bowl, whip the cold heavy cream to soft-to-medium peaks.
- Whisk about one-quarter of the whipped cream into the thickened Jell-O to lighten the mixture.
- Using a rubber spatula, gently fold the remaining whipped cream into the Jell-O in two additions until no streaks remain.
- Transfer to a serving bowl or individual dessert cups and refrigerate for 2–4 hours, or until set.
