Behind every great market is a master of the trade. Meet Ben, Quality Seafood’s Head Fishmonger and Gulf specialist. A former chef turned fishmonger, Ben brings a decade of direct purchasing experience with Texas Gulf fishermen.

Ben leads a team of seasoned fish-butchers—including craftsmen on staff with up to 53 years of experience—who handle their knives with such precision they could practically fillet with their eyes closed.

During our visit, Ben let me work with the fishmongers in the back; they led a step-by-step masterclass on filleting a fresh Texas Black Drum. While filleting whole fish can feel intimidating to home cooks, witnessing a master at work reveals the rhythm and finesse behind the blade. Shout-out to John, Scotty, Jake, Rodrigo, and the whole team; they are amazing humans.

  1. Workspace Prep: Position a clean cutting board, a wet towel beneath the fish for stability, and a razor-sharp filleting knife.
  2. The First Cut: Guide the blade from belly toward the head, following the natural seam near the dorsal fin to preserve maximum yield.
  3. Navigating the Spine: Feeling the bounce of the knife against the spine to stay as close to the frame as possible.
  4. The Signature “J-Cut”: Executing a fluid, curved cut along the rib cage that cleanly removes both the ribs and the delicate pin bones in one seamless sweep.
  5. Skinning & Finishing: Securing the tail end skin-side down, gliding the knife between flesh and skin, and trimming the fillet for exquisite presentation.
