GF Buttermilk Pie

- 1 1/2 cups sugar
- 1/2 cup butter softened
- 3 eggs
- 1 cup buttermilk
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1/4 cup GF flour
- 1 GF unbaked pie shell
Instructions
Preheat oven to 350°F.
Cream sugar and butter together, then beat in eggs.
Mix in buttermilk, lemon juice, vanilla, and flour until smooth.
Pour into prepared pie crust and bake for 45–50 minutes, or until center is set and top is golden
To Make Your Own GF Crust
Ingredients:
¾ cup almond flour
½ cup tapioca flour
¼ cup coconut flour
½ tsp xanthan gum
¼ tsp sea salt
½ cup (1 stick) cold unsalted butter, cubed
1 large egg
1–2 tbsp ice water (as needed)
1 tsp apple cider vinegar or lemon juice (optional)
Directions:
In a medium bowl, whisk together almond flour, tapioca flour, coconut flour, xanthan gum, and salt.
Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
Beat the egg and mix into the dough.
Add ice water 1 tablespoon at a time until dough comes together. It should be moist but not sticky.
Shape into a disc, wrap in plastic, and chill for 30–60 minutes.
Roll out between two sheets of parchment paper. Gently place in pie pan and press into shape.
Chill again for 15–20 minutes before baking or filling.
For blind baking: prick the crust with a fork, line with parchment and pie weights, and bake at 375°F for 10–12 minutes.

- The pie is done when the center is set but still has a slight jiggle.
- Allow the pie to cool completely before slicing.
- Store covered in the refrigerator for up to 4 days.
- Serve chilled or at room temperature with fresh whipped cream.
