GF Buttermilk Pie
Buttermilk is sour on its own — but mix it with grace, and it becomes something beautiful. God does that with our lives too.

- 1/2 cup butter softened
- 3 eggs
- 1 cup buttermilk
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1/4 cup GF flour
- 1 GF unbaked pie shell

- Preheat oven to 350°F.
- Cream sugar and butter together, then beat in eggs.
- Mix in buttermilk, lemon juice, vanilla, and flour until smooth.
- Pour into prepared pie crust and bake for 45–50 minutes, or until center is set and top is golden
To Make Your Own GF Crust
GF Crust
Ingredients:
- ¾ cup almond flour
- ½ cup tapioca flour
- ¼ cup coconut flour
- ½ tsp xanthan gum
- ¼ tsp sea salt
- ½ cup (1 stick) cold unsalted butter, cubed
- 1 large egg
- 1–2 tbsp ice water (as needed)
- 1 tsp apple cider vinegar or lemon juice (optional)
Directions:
- In a medium bowl, whisk together almond flour, tapioca flour, coconut flour, xanthan gum, and salt.
- Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
- Beat the egg and mix into the dough.
- Add ice water 1 tablespoon at a time until dough comes together. It should be moist but not sticky.
- Shape into a disc, wrap in plastic, and chill for 30–60 minutes.
- Roll out between two sheets of parchment paper. Gently place in pie pan and press into shape.
- Chill again for 15–20 minutes before baking or filling.
- For blind baking: prick the crust with a fork, line with parchment and pie weights, and bake at 375°F for 10–12 minutes.

Notes
- The pie is done when the center is set but still has a slight jiggle.
- Allow the pie to cool completely before slicing.
- Store covered in the refrigerator for up to 4 days.
- Serve chilled or at room temperature with fresh whipped cream.
