Ingredients

  • 1 Kabocha Squash, Roasted
  • 1 1/2 tablespoons extra-virgin olive oil

Maple-Cider Drizzle

  • 2 tablespoons apple cider vinegar
  • 1 tablespoon pure maple syrup

For The Toast

  • 4 thick slices sourdough bread
  • Extra-virgin olive oil for brushing and finishing
  • 1/2 to 3/4 cup cottage cheese preferably small-curd
  • Flaky sea salt such as Maldon
  • Fresh mint leaves thinly sliced or torn
  • Optional: extra chili flakes or black pepper for finishing

Instructions

  • Prepare the kabocha: Preheat the oven to 400°F. Carefully cut the kabocha squash in half and scoop out the seeds. The skin is edible, so leave it on if desired. Cut the squash in half and roast cut side down or into roughly 3/4-inch pieces.
  • Season and roast: Toss the squash with 1 1/2 tablespoons olive oil, kosher salt, garlic powder, black pepper, and chili flakes. If dicing Spread in a single layer on a parchment-lined sheet pan.
